Love Food, Hate Waste
Over the past couple of weeks, the team at ASQ Skydancers have been participating in the 'Love Food, Hate Waste' program introduced by Sustainability Victoria to help Victorian hospitality businesses reduce their food waste.
We recently completed a review to identify where food waste occurs most in the café. From reviewing spoilage, preparation, plate waste and end of day surplus we have discovered that 67% of waste comes from plates and 33% comes from preparation.
After receiving the results from the review, we developed an action plan to dramatically reduce the amount of food we throw away over coming months. The plan includes strategies for decreasing waste by changing the way we order, store and prepare food as well as watching the portion sizes of items often left on plates at the end of a meal.
Over the coming months as we trial our action plan and continue to review our waste, we encourage you to participate in the program at home by reviewing your waste and creating an action plan.
